4 flavours, 1 cake mix
you will need-
one vanilla cake mix (i used woolworths basic vanilla) with ingredients needed on back of packed, usually butter and milk
one lemon
coco powder
one orange
one apple (i used pink lady)
cinnamon
mini patty cases (cupcake cases)
icing sugar
thickened cream
butter
vanilla
method-
1. in a large bowl mix together your vanilla cupcake mix
2. once mixed split batter into 4 bowls.
3. in bowl 1 of batter add 2 tbsp of coco powder and zest of one orange. set aside
4. in bowl 2 of batter add half finely chopped apple (you can also grate the apple if you prefer less apple texture) and 2 tbsp of cinnamon, mix and set aside.
5. in bowl 3 of batter add zest of one lemon, mix and set aside
6. bowl 4 will be plain vanilla batter.
7. using a mini cupcake tray, fill with cupcake cases. fill cupcake cases with batter. depending on your cupcake tray you may need to do this twice. My mix made 40 cupcakes. bake at 180c for 8-10 minutes.
8. to make icing added 4 cups of icing sugar, 1/4 cup of thickened cream and 2 tbsp of butter to a large bowl. whisk until icing is thick and creamy.
9. split the icing into 4 bowls. in one add 1 tbsp of cinnamon, in bowl 2 add 2 tsp lemon juice, in bowl 3 add 2 tbsp coco powder, and bowl four ass 1 tsp vanilla extract
10. once cupcakes are cool you can pip or spread the icings on the corresponding cupcakes- cinnamon on the apple cinnamon cupcakes, lemon on lemon, chocolate on chocolate orange and vanilla on vanilla.
11. decorate with our dehydrated slices cut in quarters.
