Simple lemon bundt cake

Ingredients-

for cake- 

  • 250 grams butter, softened
  • 1 teaspoon vanilla extract
  • 1¼ cups (275g) caster sugar
  • 3 eggs
  • 2¼ cups (335g) self-raising flour
  • ¼ cup (35g) plain flour
  • ¾ cup (180ml) milk

for decorating- 

Method-

  • 1- Preheat oven to 180°C/350°F. Grease your favourite bundt cake pan. 
  • 2 - Beat butter, extract and sugar in a medium bowl with an electric mixer until light and fluffy. Beat in eggs, one at a time. Stir in sifted flours and milk, in two batches. Spread mixture into pan; smooth surface.
  • 3 - Bake cake until golden brown or cooked through. 
  • 4 - Leave cake in pan for 5 minutes before turning out 
  • 5 - In a seperate bowl mix icing sugar, lemon juice and 2 tbsp water together. 
  • 6 - Once cake is out of pan add icing sugar to the top of the cake. Decorate with dehydrated lemon slices
